My kids requested Japanese school lunch tomato stew, so we made it together.
This easy tomato stew is made with simple everyday vegetables you can find anywhere.
Even picky eaters enjoy this, and it’s perfect for busy days. Hope you give it a try ♪

特別な調味料は不要。どの国でも手に入る野菜で、驚くほどコクのある味わいになります。 野菜が苦手な子供でもパクパク食べてくれる、我が家の鉄板メニューです。

Japanese School Lunch Tomato Stew
Difficulty: Easy
Time: 30 min
Servings: 4
Ingredients:
150g (5oz.) thinly sliced pork
300g (10oz.) potatoes
100g (3.5oz.) carrot
300g (10oz.) onion
1 clove garlic
1 tbsp. olive oil
400g (14.5oz.) canned diced tomatoes
400ml (1⅔ cups) water
2 chicken bouillon cubes (or 2 sticks consommé)
1 bay leaf
salt and pepper
dried parsley (optional)
Directions:
1. Cut the potatoes and carrot into bite-sized chunks. Slice the onion, mince the garlic, and cut the pork into bite-sized pieces.
2. Heat the olive oil and minced garlic in a pot. I’m using garlic-infused olive oil, so I skipped the fresh garlic. Add the pork, potatoes, carrots, and onions. Cook until the vegetables are lightly coated with the oil.
3. Add the canned diced tomatoes and water (use the empty can to measure the water and rinse out any remaining tomatoes). Bring to a boil, then simmer for 10 minutes.
4. Add the chicken bouillon cubes (I'm using 2 sticks of consommé instead) and bay leaf. Simmer for another 10 minutes, then season with salt and pepper to taste.
5. Remove the bay leaf. Serve and garnish with dried parsley, if desired.

Heart-Shaped Cream?! Decorating Japanese Bisco
Difficulty: Very Easy
Time: 20 mins + cooling time
Number of Servings: 2~3
Ingredients:
Bisco cream sandwich biscuits
chocolate pen
Directions:
1. Gently open the biscuit, keeping the heart-shaped cream on one side.
2. Warm the chocolate pen in hot water and draw your favorite designs.
3. Attach the other biscuit underneath with a little chocolate and enjoy.

Crispy & Chewy Mochi Potato Fries
Difficulty: Very Easy
Time: 20 mins + cooling time
Number of Servings: 2~3
Ingredients:
500g potatoes
80ml (1/3 US cup) milk
5 tbsp. potato starch
1/3 tsp. salt
oil for deep frying
ketchup
Directions:
1. Slice the potatoes into half rounds.
2. Cover and microwave at 600W for 7 minutes until soft.
3. Mash with a fork. Add the milk, potato starch, and salt. Mix until smooth.
4. Spread the mixture onto plastic wrap and flatten it out. Freeze until firm.
5. Cut into thin fries.
6. Deep fry until golden brown and crispy.
7. Drain well and serve with ketchup.

We went to Gotokuji Temple on Children’s Day 🎏
Gotokuji is famous for its lucky cats. The lucky cat is a symbol of good fortune.
Here’s an interesting story: Hikonyan is from Hikone in Shiga, my darling’s hometown, but the story behind Hikonyan began at Gotokuji in Tokyo, near where we live.
This is why we came here today. It was a beautiful day and perfect weather for a 15-minute walk from the station 🚉
