This is Takaikami Island 高井神島, a remote island off Japan’s coast that is also known as Manga Island. It’s just 1.34 square kilometers—roughly the size of Disneyland California—but only 11 people still live here, all on a narrow stretch of land surrounded by sea and forest. Across the island, many homes sit abandoned. Without clear ownership, they’re left to decay, quiet reminders of the island’s past. Yet one man has refused to let the island fade away. Using his own money, he invited manga artists to cover the village in colorful murals, creating a place where art and nature coexist. He’s also opened a manga school, guesthouse, and café to draw in visitors and revive local life. But survival here isn’t easy. With fishing not really a sustainable livelihood, the community is turning toward new industries like farming, beekeeping, and charcoal production, hoping to create stable jobs and keep the island alive for another generation.

I went behind the counter at Kamekou, a traditional oden shop in Tokyo’s Ginza, to see how one chef has been perfecting the same broth for more than 30 years. Every day, Azuma-san replenishes and simmers his Kanto-style stock, building layers of flavor that fill the shop with a deep, comforting aroma. Azuma-san began his career at Otakō, one of Tokyo’s oldest oden restaurants with over a century of history. When the original owner opened Kameko through the Japanese custom known as Noren Wake, granting permission to carry on the same recipe, Azuma-san joined him. Fifteen years ago, he took over the restaurant to continue his mentor’s legacy. Oden itself dates back more than 800 years to the Edo period. What began as tofu and vegetables topped with miso evolved into ingredients simmered in broth throughout the day for Japan’s busy townspeople. By the Meiji era, fish cakes, konnyaku, and vegetables had been added, shaping the dish known today. At Kameko, 33 ingredients simmer in harmony, each timed perfectly from memory. For Azuma-san, oden is more than food—it’s a craft shaped by rhythm, patience, and decades of experience.

Behind the counter at local Japanese Hamburger and Pastrami shop. Hidden in Shibuya, Chillmatic is redefining Japanese craft burgers with aged beef and homemade pastrami that take flavor to another level a Japanese craft burger shop known for serving one-of-a-kind burgers made with aged beef and topped with irresistible homemade pastrami. This isn’t fast food, it’s the art of burger making elevated to a fine dining experience. Chillmatic first opened three years ago on the first floor of the Mustard Hotel in Shibuya. That’s where I first discovered it and became hooked on their unforgettable burgers. But when the hotel closed after just one year, the shop was forced to move from pop-up to pop-up for an entire year before finally finding a new permanent home in its current location. Behind the grill is Chef Shioda-san, a Tokyo native whose roots run deep in Japan’s culinary world. At Chillmatic, the beef is seasoned with an original blend of nine spices and marinated for seven days to deepen the umami flavor. Once ready, it’s slow-cooked to preserve its juiciness and transformed into pastrami unlike anything else in Japan. Each patty combines four cuts of beef, all aged for at least 90 days, creating a flavor profile that’s rich, smoky, and full of depth. Shioda-san toasts the buns, melts the cheese to the ideal consistency, and finishes with their house-made sauce, a final touch that ties everything together. It’s not just a burger; it’s the result of years of dedication, technique, and an unwavering commitment to craft.

I Waited 2-Hours to try Japan's Fluffiest Egg Sandwich
I traveled 3 hours to Osaka just to eat the fluffiest egg sandwich in Japan. Along the way, I also stayed at a hotel built on top of a real Japanese temple in the heart of Osaka. It’s one of the most unique hotels I’ve ever stayed in. The Candeo Hotel Osaka Shinsaibashi is built directly on top of a Japanese temple, right on Midosuji and surrounded by high-end fashion shops, with Shinsaibashi and Namba just a short walk away. If you’re visiting Osaka for the first time, this spot puts you right in the center of the city. It was the perfect place to call home base I as I made my way to the fluffiest egg sandwich in Japan. Imagine a sandwich stacked with perfectly cooked eggs, still soft and creamy in the center, diced whites for texture, and layered with mayonnaise for richness. It even comes topped with Italian parsley. The first bite is a surprise—gooey, delicate, and packed with flavor. The texture is so soft it feels like biting into marshmallow or cotton candy made out of eggs. This isn’t just a sandwich. It’s a food experience that takes something simple and turns it into something unforgettable.
