I’m back with another Tokyo on Ten, the series where I explore Tokyo food under 10 dollars that is a perfect ten. Today’s Tokyo on Ten location is Kagawa Ippuku ART, a Michelin Bib Gourmand winning Japanese restaurant that serves some of the best udon in Tokyo. For anyone searching what to eat in Tokyo or what to eat in Japan, this spot stands out for its balance of traditional Japanese cuisine and modern creativity. This Tokyo food favorite rotates its menu by date. On even numbered days, you get the blue menu with thick udon noodles. On odd numbered days, the red menu features thinner noodles. It adds a fun twist to your Tokyo travel food experience, but it also means you need to plan ahead depending on your preference. Their Sanuki style udon is known for its chewy, springy texture. The dough is kneaded, aged twice under controlled conditions, and served fresh to maintain its signature bounce. It is a perfect example of Japan food culture and craftsmanship in a simple bowl.

Today I’m going behind the counter in Japan at Ornin, a ramen shop in Gotanda serving one of the most unique bowls of Japanese food you can find. If you are exploring Tokyo travel and building your Japan guide or Tokyo food guide, this is a spot you would never expect to become Japan’s hangover cure. This Japan food documentary follows Kumazaki san, the owner who fell in love with shijimi ramen at a small shop in Matsuyama. The original Japanese restaurant had been run for 22 years before closing, and he convinced the owner to train him so he could carry on the recipe. To learn authentic Japanese cuisine, he moved there for two months, studying every detail despite the owner cooking purely on intuition. Shijimi ramen is a clear soup made from small clams packed with nutrients like taurine and B vitamins. This is part of Japanese food culture and everyday Japan life. Kumazaki san carefully adjusts cooking time to balance umami without drying the clams. This is behind the counter in Japan at Eiraiken, a small machi-chuka, or Japanese style Chinese restaurant, tucked away in a quiet Yokohama neighborhood. This Japanese restaurant has been serving Japanese Chinese food since 1969 and is deeply rooted in local Japan food culture. Originally run by an elderly man with no successor, the shop was nearly destined to close. That is until Erika san, a customer and Japanese woman from the area, stepped forward out of pure love for his japanese cuisine. Despite resistance and doubt, she persisted until she earned the chance to begin her apprenticeship with him. This is what working in Japan often looks like including long working hours to serve their customers. In this Japan food documentary, you’ll see how she recreates signature dishes like gyoza and fried rice without measurements, staying up night after night until the taste matched the original. Japanese gyoza, unlike its roots in Chinese cuisine in Japan, is pan fried and served with rice, reflecting how Japan food is built around balance.
